PB Brownie Recipe!

this is for a very large..11x16 sheet pan with good edges to hold all the Peanut Buttery goodness in!

Preheat oven to 350.

Cream the following:
4 sticks soy margarine
3 cups regular sugar
2 T. Egg replacer + 1/2 c Water--combined separately
2 T. Vanilla

Add:
1 1/2 c. Cocoa
4 1/2 c. Flour
2 tsp. Baking Soda

Bake for 8 min..it should be like a brownie..all done, it looks the same as when it went in.

PB Layer

Cream:
2 Sticks soy margarine
3 cups Peanut Butter
14c. Powdered Sugar
2 c. Full fat Soy milk
2 T. Vanilla

Spread over cooled brownie layer.

Topping---chocolate glaze:
Combine in food processor:

2 Pks. Mori-Nu Tofu-Firm--tofu type is very important to the texture of the topping!

1/3c. Maple Syrup
1/3c. Rum
1 T. Vanilla
Pinch salt.

Add through the top..while processor is on:
8c. Melted Dark Chocolate

Puree until smooth, then spead evenly over top of PB layer.

Refrigerate until set!

And cut when cold!
Serve in cup cake paper cups for easier handling and storage.

That is all very very complicated, but I am so glad to have the recipe. I will try to make it before I leave Denver.
